This is a family recipe from my friend, Wendy. I love her description of them best: "I was first introduced to Yummy Bars on a Lake Powell trip with my in-laws shortly after Matt and I were married. The name does not disappoint. Only make these if you have enormously strong will power or you enjoy being a slave to addiction. They are dessert crack. They are easy to make, like 1 Star easy. They are a bar cereal treat similar to Rice Krispy Treats, but we think they are far more delicious. Tip: You can be melting the butterscotch chips and chocolate chips in a double boiler while cooking the syrup, sugar mix on another burner. Tip 2: If your Yummy Bars don’t turn out deliciously chewy, try cooking your sugar-syrup mix past a simmer but right before a boil. The consistency is related to how long and what temperature sugars cook."
1 cup Dark Karo Syrup
1 cup Sugar
Bring to a boil. Turn heat to Low.
Add:
1/2 cup Peanut Butter. Whisk or stir together. Remove from heat.
Pour over
6 cups Special K cereal in a large bowl and mix together to coat the Special K flakes.
Lightly pat down in 9" x 13" pan.
Pour melted mix of 1 package each, chocolate chips and butterscotch chips (that have been stirred together thoroughly) over the top.
Place in fridge to harden the chocolate for 15 minutes. Take out, bring to room temperature, cut and enjoy.
